Montego Bay Jamaican Jerk Pork Loin

Of the places I've been in my life I decided to recreate a pork loin that reciprocates my experience in Jamaica. This Jerk Pork Loin perfectly exhibits the colorful, fun, and savory experience I had while I was there all presented on a simple white plate. For this dish, luckily the pork loin was already pre-marinated in jerk seasoning so I could place it straight into the oven without and pre-treatment to the meat. To turn up the heat a notch, I created my own Blackberry~Jalapeño sauce to overlay the loin once taken out of the oven. To sweeten the dinner up Plantains were perfectly fried and served on the side with a Fresh Spinach Salad topped with a separate Blackberry Dressing.
